This Unoaked Chardonnay is a pleasurable drink, since the delicate fruit of this variety is preserved and emphasised. Typical aromas are poached pears, white peach, winter melon and ginger spice. These are complemented by a well constructed palate that is rich and full flavoured.

A typical South African Chardonnay because of its beautiful mineral notes and wonderful oak integration.  The aromas have Burgundian characters of flint, peaches, lime and some nuttiness while the palate is elegant with loads of finesse that gives it length and freshness.

Juicy finish with structure and savoury length.  Barrel fermented for 6 months.

This wine was aged in 100% French oak barrels the majority of which were older and about 20% were new.  This has produced a complex subtle wine that has intense peach, ripe nectarine like characters overlaying a creamy, hazelnut and slightly spicy character, rather than overt fruitiness.

The wine is full bodied and elegant, with a dry and crisp finish.

Secondary flavours and aromas of wood spice and light toast are created through fermentation and maturation in Burgundy oak barriques.

The lingering aftertaste of the wine is complemented by the toastyness of new wood.

An artist’s wine: Since 2000 Philip Jonker has produced this unique and highly exclusive, elegant and stylish wine.  Only one barrel is made for each vintage producing only 300 bottles and the wine is only released if it meets with this young and dynamic winemakers approval.

The wine is on allocation and only 100 bottles are available in Hong Kong which is the allocation for the whole of Asia.
